For handling fatty or oily foods, nitrile gloves are the safest and most recommended choice. Nitrile is a synthetic material that, unlike others, offers an excellent barrier and maintains its structural integrity even during prolonged contact with oils, fats, and related substances.

Nitrile gloves pose a low risk of migrating unwanted substances into fatty or oily foods—an especially critical factor for food contact materials (FCMs).

Latex gloves, while offering good sensitivity, are often not suitable for contact with oily or fatty foods.

Vinyl gloves may contain plasticizers that, when in contact with fatty foods, can migrate into food in quantities exceeding legal limits, compromising food safety.
